Light Lettuce Microgreen Salad with Lemon Vinaigrette

The soft, light lettuce microgreens meet a zesty lemon vinaigrette with bright radish, cucumbers, and carrots to create a light salad.

This salad recipe is just right for a side salad to accompany more lemon dishes, or as an appetizer or snack that both tastes and feels good. 

Ingredients

  • 1 Cup Microgreens. For this recipe, we recommend Lettuce Microgreens
  • 2 Cucumbers
  • 3 Radishes 
  • 1 Carrot
  • 1/2 Cup Chopped Chives 

Vinaigrette Ingredients

  • 2 Tbsp Lemon Juice 
  • 4 Tbsp Olive Oil
  • 1 Tsp Dijon Mustard
  • Salt and Pepper 

Directions

Making the Vinaigrette 

  1. Carefully combine lemon juice, Dijon Mustard, and pinches of salt and pepper into a small bowl.
  2. While slowly adding the olive oil, stir the vinaigrette thoroughly until the ingredients are well-blended. 
  3. Store in a with a tight fitting lid and refrigerate until ready to use. Shake vigorously before using.  

Making the Salad

  1. Ensure the salad ingredients are rinsed and dried before preparation to avoid excess moisture seeping into the salad. 
  2. Thinly slice the cucumbers and radishes, finely chop the chives, and shred the carrots thoroughly. 
  3. Combine the microgreens, cucumbers, radishes, and chives in a salad bowl and carefully toss the ingredients together.
  4. Drizzle the lemon vinaigrette evenly over the salad and serve immediately.
