Ingredients
- 1 Cup Microgreens. For this recipe, we recommend Lettuce Microgreens
- 2 Cucumbers
- 3 Radishes
- 1 Carrot
- 1/2 Cup Chopped Chives
Vinaigrette Ingredients
- 2 Tbsp Lemon Juice
- 4 Tbsp Olive Oil
- 1 Tsp Dijon Mustard
- Salt and Pepper
Directions
Making the Vinaigrette
- Carefully combine lemon juice, Dijon Mustard, and pinches of salt and pepper into a small bowl.
- While slowly adding the olive oil, stir the vinaigrette thoroughly until the ingredients are well-blended.
- Store in a with a tight fitting lid and refrigerate until ready to use. Shake vigorously before using.
Making the Salad
- Ensure the salad ingredients are rinsed and dried before preparation to avoid excess moisture seeping into the salad.
- Thinly slice the cucumbers and radishes, finely chop the chives, and shred the carrots thoroughly.
- Combine the microgreens, cucumbers, radishes, and chives in a salad bowl and carefully toss the ingredients together.
- Drizzle the lemon vinaigrette evenly over the salad and serve immediately.
