Simple Spicy Microgreen Salad

It's no secret that microgreens are wonderful when mixed into a salad. Microgreens can be quite spicy and flavorful, which means they may be added together to make a simple, flavorful, and spicy salad.

As Thanksgiving approaches and the weather gets cooler, a spicy side salad is the perfect option if you or any of your guests would want something spicy and healthy, and it can be served up to add a flavorful vegetarian friendly and health-conscious option.

Ingredients

  • Olive oil
  • balsamic vinegar
  • Garlic powder
  • Microgreens
  • Splash of lemon juice
  • Thinly sliced red onion
  • Thinly sliced radishes
  • Feta cheese

This recipe may need to be adjusted for flavor depending on your choice in microgreens. Feta cheese may also be replaced pressed, crumbled tofu for a non-dairy option.

Directions

  • For the dressing, mix the olive oil, vinegar, and garlic powder in a jar and mix thoroughly.
  • Gently toss a generous amount of microgreens, sliced red onion, and sliced radishes in a bowl with a splash of lemon juice.
  • Sprinkle the top of the salad with feta cheese.
  • As it's served, drizzle the dressing over the salad.
