Microgreen Omelette

Microgreens are tasty mixed with eggs. Microgreen omelettes in particular are a great way to cook microgreens while keeping the nutritional value and the flavor, as a delicious breakfast that's healthy and easy to prepare. 

Ingredients

  • 3 eggs
  • 1/2 cup of microgreens (our recommendations are radish, broccoli, turnip, or our super food mix)
  • 1/3 cup of shredded cheese
  • 1 teaspoon of butter
  • Pinch of salt and pepper to taste
  • Splash of milk for texture

Different ingredients, such as diced tomatoes or peppers, may be added as preferred.

Directions

  1. In one bowl, whisk together your eggs, milk, salt, and pepper then set aside.
  2. In a second bowl, gently mix your microgreens of choice, shredded cheese, and any other desired ingredients.
  3. In your frying pan, heat butter over medium heat until melted.
  4. Pour the eggs evenly into the frying pan. Cook until the edges start to set.
  5. Evenly sprinkle your mix of microgreens and cheese on one half of the omelette.
  6. With a heatproof spatula, carefully fold the omelette in half and then cook until the cheese has melted and the eggs are fully set.
  7. Carefully slide the omelette into a plate then serve immediately.
