Ingredients
- 3 eggs
- 1/2 cup of microgreens (our recommendations are radish, broccoli, turnip, or our super food mix)
- 1/3 cup of shredded cheese
- 1 teaspoon of butter
- Pinch of salt and pepper to taste
- Splash of milk for texture
Different ingredients, such as diced tomatoes or peppers, may be added as preferred.
Directions
- In one bowl, whisk together your eggs, milk, salt, and pepper then set aside.
- In a second bowl, gently mix your microgreens of choice, shredded cheese, and any other desired ingredients.
- In your frying pan, heat butter over medium heat until melted.
- Pour the eggs evenly into the frying pan. Cook until the edges start to set.
- Evenly sprinkle your mix of microgreens and cheese on one half of the omelette.
- With a heatproof spatula, carefully fold the omelette in half and then cook until the cheese has melted and the eggs are fully set.
- Carefully slide the omelette into a plate then serve immediately.
